COMPOSITION OF THE CUVÉE: 100% Pinot Nero

PRODUCTION TECHNIQUE: A part of the Pinot Noir grape is pressed and left in contact with the skins in temperature-controlled tanks at 10 ° C for 12-24 hours. At the end of the maceration the regular soft pressing takes place. The musts ferment in stainless steel tanks at a low temperature (18-20 ° C) and at the end the wine is kept in contact with the fine lees until spring. At this point the cuvée is made by combining the wines from the two fermentations. In May, the wine undergoes a second fermentation, in the bottle, followed by a process of 48 months of maturation on the lees, in the cool, dark and protected environment of the cellars, in compliance with the most rigorous rules of the Classic Method Spumante.

TASTING NOTES: Contessa Rosa represents the true spirit of Fontanafredda: dedicated to Contessa Rosa Vercellana, known as “Bela Rusin”, this sparkling wine, produced with grapes grown at high altitudes, expresses the union of aromatic freshness and complexity, typical of great wines like Barolo. For the creation of this cuvée, a new method was developed, using a liqueur d’éxpédition containing a few drops of Barolo DOC 1967. The result is a pale pink sparkling wine with onion skin reflections. The scent recalls aromas of orange blossom, chinotto pomegranate fruit and black plum, ending with ginger, nutmeg, lavender, basil and a background of custard. In the mouth the bubble is fine and persistent and the acidity is in balance with the sweet note. A mineral and savory sensation ends with a citrus aftertaste.
